Surely many people are aware that "rice is the main ingredient of Japanese sake."
Do they know, however, what ingredients are important for making delicious rice vinegar? They are rice and water.
"We want to provide products that are healthy, delicious, and safe to eat!" Driven by this sheer desire, we spent over ten years finding a soft spring water with a PH of around seven, which is the highest standard of quality for cooking, and absolutely necessary for making vinegar. We then moved our factory to its current location in the Kuchi area of Asacho in northern Hiroshima.
The rice is just as important as the water, and that is why we use organically farmed "Akita Komachi" rice. This rice was decided on after searching rice growing areas and rice growers to find a rice that would best match our natural spring water and the vinegar bacteria (acetic acid bacteria) that our company has been cultivating for the 80 years since we were founded.
Since we were founded, our company's pursuit has been to make "delicious vinegar," and carefully select ingredients to make a 100% pure rice vinegar made from spring water. So much careful work goes into making "rice vinegar." You could even say that we go out our way to make it. This is what underlies our company's "delicious vinegar."
Also, since Japanese-grown organic ingredients are rare, we limit our sales outlets.
