Our Winery has been built on the concepts that rules the modern Wineries. That means: It is our wines who are determinating their ageing process.Red wines are the final product coming from a careful selection ofplots, vineyards and grapes. However this exhaustive controlling process would not be useful if our winery did not take care of ripening process of grape and this exact point makes the difference. Our red wines need 12 months at least in a brand new frech oak barrel or seminew barrel (not more than 4 years) to reach its differentiating features. In fact we use new barrels to ageing our red wines to keep the following features that some traditional wineries have already lose in their wines: -Fruity flavors of young wine.-Tannins flavors.-Flavor from aging in barrel.-Flavor of toasting from barrel. A complex structure of flavors is obtained. We age shortly our wines in new barrels to keep their natural fruity and tannic flavors.White wines: At the moment, we can offer you three different white wines. Their main difference: They are made with a recovered varietie of grape White Muscatel with small grain very well-known by Romans because of its enormous potentially and the finesse of its berries. As product of this kind of grape, we can offer high quality Dry, Off dry and sweet white wines.
